紅油炒手 Spicy Wonton



紅油抄手材料:‧餛飩皮:12張‧瘦絞肉:75公克


配料:


‧紅辣油:2茶匙

‧花椒粉:1/4茶匙

‧蒜泥:1/4茶匙

‧蔥花:1/4茶匙

‧白醋:1/4茶匙

‧甜醬油:1茶匙

‧蛋白:1/4個

‧胡椒粉:1/4茶匙

‧鹽:1茶匙

‧麻油:1茶匙

‧醬油:1茶匙

‧米酒:1/2茶匙

‧薑水:1茶匙

‧芹菜末:1/4茶匙

‧冬菜末:1/4茶匙

‧清水:半鍋


做法:

●先用紅辣油1大匙及蒜泥、蔥花、芹菜末、冬菜末、醋各1/4茶匙,甜醬油1茶匙和花椒粉1/4茶匙,調成「紅油調味料」備用。


●處理肉餡兒的步驟,是先用刀把絞肉拍鬆後,用1/4個蛋白及胡椒粉1/4茶匙、鹽1/4茶匙、酒1/2茶匙及麻油1/2茶匙攪拌均勻,這就是特製的肉餡兒了。


●肉餡兒和餛飩皮準備好了後,在餛飩皮當中放入一茶匙肉餡兒,再把餛飩皮對摺成三角形,將底邊往上摺,左右再對摺一次就可以了。抄手包好以後,將抄手下鍋燙煮一下,鍋裡的水煮開後,抄手就可以起鍋了。


●「紅油抄手」是四川著名的點心,酸甜香辣,風味絕佳,儼然成為四川小吃的代表。其實四川人所謂的「抄手」也就是浙江人說的「餛飩」,福建人則叫它「扁食」,這些都是相同的食物,只是名稱和配料不同而已。

辣油2大匙、花生粉1/2大匙、 糖2大匙、 黑醋1小匙、 醬油4大匙、蔥花適量、香菜末適量

Jamie Oliver, the Chef



Always fascinated in how some men learn to cook so well...

It totally go against the traditional stereotypical view how women need to be the one that take care of the home chores such as cooking, washing dishes, cleaning, doing laundry..etc. Don't you think it's sexy and more appealing to women that their men know how to do the work and willing to share the load with them? It would be a great relief for women...that I'm 100% sure! Perhaps I'm the kind of wife that'll get turned on when hubby attends to the children and taking care of some unfinished chores.

lol...God please don't forget to reserve a good chef for me k...cuz that way I won't starve to death besides you know how much I LOVE eating!! :P

山菜おやき

山菜おやき
ふきのとうを入れた素朴な田舎風のおやきです。ふきのとうの代わりにネギを使ってもおいしいですよ!




30分

1. ニラは小口切り、ふきのとうも細かく切っておく。
2. ふきのとう、ニラ、紅ショウガ、砂糖、味噌、豆板醤をボウルに入れて軽く混ぜ、薄力粉も入れてさっくり混ぜる。ここに溶き卵、だし汁を入れてよく混ぜる。
3. ホットプレートにサラダ油を入れ、180~200℃で温め、生地をお玉で厚さ1cm、大きさ5cm×10cmくらいの楕円形に伸ばし、片面はふたをして焼き、まわりが乾いてきたら裏返してふたを取り、こんがり焼く。 (4人分)

薄力粉 : 1カップ
だし汁 : 100cc
卵 : 1個
ふきのとう : 3個
ニラ : 1/2束
紅ショウガ : 大さじ2
砂糖 : 大さじ2
味噌 : 大さじ1~2
豆板醤 : 小さじ1
サラダ油 : 大さじ3~5

Starbucks 10yrs Anniversary in Taiwan






Really gotta share this wonderful piece.....lol
especially the Tiramisu cream on top along with the lime peel surely added the extra scent!

serves one

1 12-ounce wine glass, preheated
10 ounces French Roast brewed coffee
1 1/2 jigger brandy

Tiramisu Cream

Ingredients

EGG WHITES, 2 beaten into a soft meringue
EGG YOLKS, 2
WHIPPING CREAM, 1/2 cup whipped with pinch of sugar and dash of vanilla
MARSALA WINE, 2 tablespoons
SUGAR, 3 tablespoons
MASCARPONE CHEESE, 8 ounces
Directions

Whisk the sugar, egg yolks and wine into the mascarpone.
Fold in 1/2 of the meringue.
Fold in 1/2 of the whipped cream.
In a separate bowl, fold remaining meringue and whipped cream together to make "mousse blanc."

Don't forget to add the Tiramisu Cream on top.....

Pour hot coffee in the heated wine glass and stir in the brandy and the lemon peel.
