紅油炒手 Spicy Wonton
紅油抄手材料：‧餛飩皮：12張‧瘦絞肉：75公克
配料：
‧紅辣油：2茶匙
‧花椒粉：1/4茶匙
‧蒜泥：1/4茶匙
‧蔥花：1/4茶匙
‧白醋：1/4茶匙
‧甜醬油：1茶匙
‧蛋白：1/4個
‧胡椒粉：1/4茶匙
‧鹽：1茶匙
‧麻油：1茶匙
‧醬油：1茶匙
‧米酒：1/2茶匙
‧薑水：1茶匙
‧芹菜末：1/4茶匙
‧冬菜末：1/4茶匙
‧清水：半鍋
做法：
●先用紅辣油１大匙及蒜泥、蔥花、芹菜末、冬菜末、醋各1/4茶匙，甜醬油1茶匙和花椒粉1/4茶匙，調成「紅油調味料」備用。
●處理肉餡兒的步驟，是先用刀把絞肉拍鬆後，用1/4個蛋白及胡椒粉1/4茶匙、鹽1/4茶匙、酒1/2茶匙及麻油1/2茶匙攪拌均勻，這就是特製的肉餡兒了。
●肉餡兒和餛飩皮準備好了後，在餛飩皮當中放入一茶匙肉餡兒，再把餛飩皮對摺成三角形，將底邊往上摺，左右再對摺一次就可以了。抄手包好以後，將抄手下鍋燙煮一下，鍋裡的水煮開後，抄手就可以起鍋了。
●「紅油抄手」是四川著名的點心，酸甜香辣，風味絕佳，儼然成為四川小吃的代表。其實四川人所謂的「抄手」也就是浙江人說的「餛飩」，福建人則叫它「扁食」，這些都是相同的食物，只是名稱和配料不同而已。
